Recipe for pesto Genoa-Style:

Ingredients: 1/2 cups fresh basil leaves - 1/2 teaspoon salt - 1/4 teaspoon freshly  ground black pepper - 1/ cup freshly grated parmigiano reggiano - 2 teaspoon pine nuts or walnuts toasted - 1 teaspoon minced garlic - 1/2 cup extra-virgin olive oil.

In a mortar combine the basil, salt and pepper and pound it for a few seconds until the basil is crushed. Then add the garlic, the parmigiano cheese and the pine-nuts (you can also use macadamias). Keep on pounding it all together and add extra-virgin olive oil into it, and the pesto is ready.
