Louise Gordons Potato Latkes (from her fav cook book) International Goodwill recipe Book (1950) produced by Johannesburg women's zionist league INGREDIENTS 3 medium potatoes small grated onion 1 teaspoon salt 1/2 teasp sugar 2 eggs 5 tablespoons flour 1 teaspoon baking powder oil for frying Method Grate potato and onion finely. Add salt, pepper and sugar. Add beaten eggs. Add flour and baking powder. Drop by tablespoons in deep hot oil to which small poiece of onion has been added. Fry to golden brown on each side. Put in oven to dry and crisp for 5 mins. Serve hot with sour cream and maple syrup.
RECIPE FOR COMPOST LASAGNE (from Stephanie Alexander's Kitchen Garden Companion(2009) 1 bucket vegetable scraps, fresh grass or weeds ADD ONE ITEM FROM THIS LIST 1 bucket of manure 1 bucket lucerne 1 cup of blood and bone
ADD TWO ITEMs FROM THIS LIST 1 Bucket leaves 1 bucket shredded paper 1 bucket straw METHOD to create a balance of carbon and nitrogen in your compost add alternate layers between the three groups, not adding too much of one component. After 3 weeks of layering during spring and summer (4-5 weeks in winter), turn the pile over and transfer to a second bay- the top becomes the bottom, so vice versa. After another 2-3 weeks , turn the pile over again and transfer into a third bay, then cover with a piece of carpet , this is called putting it in the oven. Once the matter is broken down completely- this will take several weeks or months- it is ready to serve on your garden!
