Think of Davidson's Plums as lemons with purple skin and red flesh. So use them in summer drinks and sorbets, as a substitute for vinegar in salad dressings, pickles and hollandaise sauce and as a condiment with red meats - perfect with kangaroo. The fruit speaks for itself and needs virtually no other flavours.

We invented a cocktail for New Year's Eve, Blood on the Snow: Malibu (white rum and coconut), cream in the glass then a squeeze of the juice and flesh of Davo Plum, unstirred.
